This Israeli salad is delicious. It’s fresh and vibrant, the perfect accompaniment to any summer spread! Made from 5 simple ingredients.

Ingredients (serves 6 as a side)

  • 1 cucumber

  • 400g vine tomatoes (roughly 8 small/ med vine tomatoes)

  • 1/2 red onion, finely diced

  • 3 tbsp lemon juice

  • 3 tbsp EV olive oil

  • Sea salt flakes, to taste

  • 30g parsley, finely chopped

Directions:

  1. Cut the cucumber length-ways into 8 slices, so you have 8 long triangular slices of cucumber. Deseed the slices.

  2. Cut the tomatoes in quarters and deseed with a teaspoon.

  3. Add all of the ingredients to a bowl with 3/4 of the parsley. Season with salt, taste and add the remaining parsley if needed!

Tips:

  1. When recipes only contain a few ingredients, focus on using good quality produce. You'll get the most out of this dish if you use quality tomatoes and sea salt (Maldon sea salt flakes are a must).

  2. Don't over chop the parsley and avoid chopping with a blunt knife as it will bruise and go black.
