Gazpacho

Is there anything better than enjoying a bowl of gazpacho on a summer’s day? Inspired by our recent trip to Gran Canaria, this gazpacho recipe is SO easy to make and it’s delicious, fresh and vibrant.

This chilled tomato soup tastes like summer in a bowl. It would make the perfect dinner-party appetiser or a light mid-week lunch.

Ingredients (serves 4 as a main, or 6 as a side)

  • Spices/ seasoning: 1 tsp cumin, 1 tsp sea salt, 1/2 tsp black pepper

  • 1.5 tbsp red wine vinegar

  • 3 tbsp EV olive oil

  • 2 garlic cloves

  • 1/2 red onion chopped

  • 1/2 cucumber, cored

  • 1 green pepper, cored

  • 1kg plum tomatoes, quartered and cored

  • 1 slice of white bread/ bread roll

  • Optional: 1/2 tsp cayenne pepper or fresh chilli

  • Toppings: chopped cucumber, tomatoes & red onion

Directions:

  1. Blitz all of the ingredients apart from the bread in a blender.

  2. Add the bread to the blended mixture and leave to soak.

  3. Blitz again until smooth, taste and adjust seasoning.

  4. Chill in the fridge for a few hours before serving.

  5. Top with chopped cucumber, tomatoes, pepper and a drizzle of olive oil before serving.
