Easy Dumpling Soup

There is only one thing I love more than dumplings… and that is dumpling soup!! This literally takes less than 10 minutes to make and is the perfect thing to eat this time of year when the weather turns cold and you crave warm soups and comfort food!
Ingredients (Serves 1):
Cook time: 10 mins
Frozen gyoza, available in any Asian supermarket
1 bulb of pak choy, separated and cut in half width ways to separate the leaves from the root
1 heaped tbsp white miso paste
1 egg
To garnish: bean sprouts, sesame seeds, spring onion and chilli oil
Directions:
Bring 2 cups of water to a simmer in a small saucepan and add the gyoza. I used prawn gyoza which only need 4 mins to cook.
After a minute, add the miso paste and dissolve in the water. I do this by rubbing the paste between two spoons whilst submerged. Taste and add more miso or water if needed.
Add the root of the pak choy, followed by the egg and stir with a wooden spoon to break the egg and create the egg drop soup consistency.
Turn off the heat and add the pak choy leaves and beansprouts. Place in a bowl and garnish with sesame seeds, more raw beansprouts and chilli oil if desired!
If you want a heartier meal, this would be delicious with some noodles or rice added to the soup
