Blueberry & strawberry coconut pudding

This vegan dessert is so easy to whip up and it tastes like you should be on holiday! Simply pop a few ingredients in a blender, blitz them up and leave to hydrate.

Ingredients (serves 4):

  • 1/2 cup frozen blueberries

  • 3/4 cup frozen strawberries

  • 1 tsp vanilla extract

  • 2 tbsp honey

  • Half can of coconut milk

  • 4 tbsp chia seeds

Directions:

  1. Blend all ingredients in a blender, without the chia seeds.

  2. Add the chia seeds & leave to rehydrate in the fridge for 20+ mins.

  3. Top with toppings of choice!

BLUEBERRY COMPOTE: I made a simple blueberry compote by heating frozen blueberries, a squeeze of honey and a splash of water for a few mins over a medium heat. To make it vegan, swap the honey for maple syrup or agave.
