10 minute orange, oat & raisin cookies

These bad boys are amazing and they only take 10 minutes to prep. The best of both a cake & a cookie - crumbly cakey centre, a beloved cookie crust and a hint of orange making them incredibly moorish… plus they’re vegan!

Ingredients (makes approx. 8):

  • Spices: 1/2 tsp cinnamon (A)

  • 75g flour (A)

  • 1 tsp baking powder (A)

  • 75g oats (A)

  • 25g sugar (A)

  • 75g coconut oil (B)

  • 1 tbsp maple syrup (B)

  • 2 tbsp alt mik (B)

  • Juice of half an orange (B)

  • Orange zest

  • Large handful of raisins

Directions:

  1. Pre-heat the oven to 160.

  2. Sieve the flour into a bowl & mix in the ingredients labelled ‘A.’ Separately, melt the coconut oil in a pan and add the ingredients labelled ‘B.’

  3. Remove the pan from heat and add the orange zest.

  4. Stir the wet ingredients into the dry ingredients and mix until evenly coated.

  5. If the mixture seems very wet you can add some more oats - mine was very wet and turned out great! Stir in the raisins.

  6. Roll into balls & place on baking tray. Press with a fork to flatten slightly and for around 10 minutes until golden brown.

  7. Leave to cool before serving & then eat your heart out because YOU DESERVE IT ️
