Crunchy nut granola

Is there a better way to wake up than to a breakfast bowl of nutty granola, topped with lashings of yogurt, berries and honey?

Adapted from a Deliciously Ella recipe, this granola is crunchy, nutty and incredibly moorish.

Ingredients (serves 4-6):

  • 1.5 heaped cups of jumbo oats/ approx. 220g

  • 60-80ml maple syrup

  • 3 tbsp coconut oil

  • Zest of 1 orange + juice of half

  • 100g mixed chopped nuts

  • 1/4 a cup/ 30g of pumpkin seeds

  • 1/4 a cup/ 30g of sunflower & chia seeds

  • Handful of raisins⠀

Directions:

  1. Heat the maple syrup and coconut oil over a low heat until combined. Remove from heat, add orange zest and juice.

  2. In a separate mixing bowl, add all remaining dry ingredients, apart from the raisins.

  3. Stir the wet ingredients into the dry ingredients until evenly coated.

  4. Spread evenly on a large baking tray and cook for approx 35 minutes at 140 turning every 5 minutes until golden brown.

  5. Stir in the raisins when cool.

  6. Serve with greek yogurt, blueberries and crunchy peanut putter!

Variations:

This recipe is flexible. You can substitute nuts/ seeds/ agave or maple for whatever you have available. Why not try adding cinnamon & nutmeg for a little winter spice!
