Coriander Lime Chicken Thighs

I hardly ever cook meat, but I saw this recipe on Modern Propers website and it looked sounded so good I had to give it a try. BOY OH BOY it is AMAZING. Spicy, tangy, fresh & charred - is there any better combo?

I cooked these in my airfryer - hands down my favourite new kitchen appliance - however you could do these on a skillet if preferred.

Ingredients:

  • 1.5 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 teaspoon honey

  • Zest & juice of 1 lime

  • 1 small bunch minced coriander

  • 1 tsp chilli powder

  • 1/2 tsp kosher salt

  • Black pepper

  • 3 chicken thighs (roughly 320g)

Directions:

  1. In a large bowl, combine the olive oil, garlic, honey, lime zest, lime juice, cilantro, chili powder, salt, and pepper.

  2. Add the chicken to the marinade, and turn to coat well. Let marinate at room temperature for 15 minutes or refrigerated covered for up to 2 hours.

  3. Heat the airfryer on the grill setting to medium high. Add the chicken thighs and cook for 12 minutes, turning halfway - keep an eye on them near the end of the cooking time so they don’t char too much.

  4. Alternatively, as per Modern Proper’s original recipe, heat a large nonstick skillet over medium heat. Working in batches, add the chicken thighs in a single layer and cook, undisturbed, until the internal temperature of the chicken reaches 165°F on an instant-read thermometer, about 6 minutes per side.

  5. Serve with lime wedges and a sprinkle of coriander!
