Chicken Caesar Salad Wrap

Summer has finally arrived in London and I am craving big salads, ice-cold drinks and park days. I have been absolutely loving these lettuce wraps. They are the perfect hot weather food and they’re somewhere between a wrap and a portable salad, perfect for a lunchtime snack outdoors.

  • Healthy

  • Low carb, high protein

  • Less than 5 minutes to assemble

Ingredients:

  • Grilled chicken thighs, you need roughly 1.5 per wrap

  • Crispy streaky bacon x 3

  • Parmesan shards

  • Sourdough croutons

  • Caesar dressing

  • Parchment paper

Directions:

  1. Take the 2 outer leaves from the iceberg lettuce and place them facing upwards, one on top of the other and season with Maldon sea salt. 

  2. Add the sliced grilled chicken thigh to the middle of the lettuce, followed by the crispy bacon, sourdough croutons and shaved parmesan. Drizzle with Caesar dressing.

  3. Fold the two sides of the lettuce in, as you would a burrito. Then use the parchment paper to help roll the lettuce wrap, similar to a burrito or summer rolls. Twist the ends of the parchment paper to make sure it's tight, then cut in half with a serated knife.
