5 ingredient Burnt Basque Cheesecake

Is there anything better than a slice of burnt Basque cheesecake? It’s luscious, creamy, an absolute showstopper and it’s delightfully simple to make with only 5 ingredients!

Ingredients:

  • 1 kg Philadelphia cheese

  • 7 eggs

  • 350g caster sugar

  • 1 tbsp all purpose flour

  • 200ml double cream 

Directions:

  1. 20 minutes before starting, take the cheese and cream out of the fridge to bring to room temperature.

  2. Pre-heat the oven to 210 degrees and using an electric mixer or whisk, combine all the ingredients in a large bowl until smooth and creamy.

  3. Line a 10 inch (25 cm) or two 6 inch springform pans with enough baking paper that it extends past the edges of the pan. Scrunch the paper up into a ball before opening up and lining the pan, this helps it reach the corners. This will make it easy to remove from the tin later on and gives it the iconic basque cheese cake look.

  4. Bake on the center rack for 35-50 minutes depending on how creamy/ loose you like it. The cake will rise and then settle as it cools. Mine was cooked through at 40 minutes, 35 would be if you like it runny.

  5. When the cake is brown and almost burnt looking, turn the oven off. The center shouldn’t be completely set. It will wiggle a lot when you move the pan (like jelly). 

  6. Let it start to cool gradually by leaving it out on the counter. After an hour or so, move the cake to the fridge to cool completely.
